Spicy Andra Recipes

Andhra Pradesh, one of the south Indian states with a flourishing culture is well known for its diverse cuisine. Andhra cuisine is famous for its spicy dishes even in other parts of India. Both vegetarian and non-vegetarian dishes speak about the culinary history of the state. It is no wonder there are eateries in other states serving Andra recipes.

Dishes based on meat, like the Andhra style chilli chicken, Andhra chicken curry or Andhra mutton curry are famous for their tangy flavor and the native touch in preparation. They are served with rice or dosa or rotis. Since Andhra Pradesh has a long coastal area, the availability of seafood and the various recipes based on them, like the Andhra fish curry are quite famous.

Vegetarian dishes like curries and pickles are also equally famous in Andhra. Dishes based on lentils like dal/pappu are a part of the Andhra cuisine. The tropical state is a homeland for a variety of mangoes based on which there are many dishes. Mango pachadi, mango rice, smoothies, avakai pickle are the common ones. Andhra breakfast recipes include pesarattu and a variety of other dosas. The parupu podi in the Andhra meals is a favorite for even non natives.

Andhra chutney or the Gongura chutney is a trademark dish. It is made from gongura leaves (red sorrel leaves). The sour nature of the leaves combined with the spicy preparation results in a lip smacking chutney, which can be matched alongside chapattis or rice. The gongura leaves are also known for their medicinal values.

It would be a mistake not to mention Andhra Biryani, when discussing the state’s cuisine. The Hyderabadi biryani is one such delicacy. A variety of biryanis like Andhra Chicken Biryani, Andhra mutton Biryani or Andhra egg Biryani are famous throughout the country. The combination of the native spices with the highly seasoned dishes gives them the well deserved fame.
