West Bengal, the coastal state of western India is known for its sea food and sweets. Being located near the resourceful Bay of Bengal, it has a wide availability of sea food sources. Fish is an important ingredient of the Bengali recipes. The Bengali fish curry and Bengali fish fry are known for their flavor and authenticity. Both sea fish and freshwater fishes are used in the Bengali kitchen. The native breeds, along with a touch of mustard is very much inviting.
Vegetarian dishes like shukto, sooji are also equally famous as their non vegetarian counterparts. Curries based on vegetables are also widely prepared in the Bengali kitchen.
Bengali chicken biryani or the Kolkata style mutton biryani are some of the trademark dishes of the state. Given the love for biryani throughout the country, the Bengali style biryanis do have their followers. Authentic Bengali Dum biryani is famous throughout the nation. The combination of the basmati rice with the native spices and herbs give the dish an authentic taste.
The machar malai or the Bengali prawn is a mouthwatering dish for sea food lovers. When they are cooked with the traditional spices, herbs and an assortment of vegetables, the authentic Bengali cuisine flavor comes out for the food lovers.
The land of Bengal is famous for its variety of sweets, the common ones being rasagullah and sandesh. Chom chom, Langcha, Payesh, Pantua, kheer are few other dishes for the sweet toothed. Most of the desserts are based on condensed milk.
