Bitter Gourd is called Karela in Hindi. This recipe is known by other names like Karele ka achar, Bitter melon pickle recipe, Karela Achar, Butter melon pickle, Pavakka achar, etc.

Making Bitter Gourd Pickle requires moderate level cooking skills. Any kind of Pickle preparation takes time, it requires around 2 days time to prepare. Bitter Gourd Pickle serves as Side Dish mainly. This pickle is sometimes served as main course for lunch or dinner. It best accompanies with Curd Rice, Sambhar Rice, Rasam Rice, etc.

The main ingredient of the recipe is Bitter Gourd. Bitter is very good for health. It helps Diabetes. Also it helps in preventing Cancer. It helps in weight loss as well as skin diseases. Bitter gourds are full of antioxidants. Bitter Gourd also helps in asthma. The other ingredients of Bitter Gourd Pickle recipe are Lemon Juice, Red Chilli Powder, Green Chillies and pickle powder. These help in lessening the Bitter taste of the Bitter Gourd and make the recipe more palatable. Most commonly we had prepare mango pickle and lemon pickle at home, but bitter gourd pickle is healthy and taste also. In short Bitter Gourd recipe is healthy and tasty at the same time.

Ingredients

  • Bitter Gourd - 200 grms
  • Lemon Juice - 4-5 Tbsp
  • Salt as per taste
  • Oil - 1/2 cup
  • Red Chili Powder - 1 1/2 Tbsp
  • Green Chilies - 3-4 Nos.
  • Pickle Powder - 1Tbsp
  • Turmeric Powder - 1/4 Tbsp

Method

Step 1

Wash bitter gourd well and chop into round slices. If may be large bitter gourd means chop into fine pieces. Remove hard seeds from it. Bitter seeds are helps to diabetic patients for control the sugar levels in their body.

Sprinkle some salt in bitter gourd mix it well. Keep the salt bitter gourd aside for 15 minutes.

Squeeze bitter gourd and discard extra salt water. Add pinch of turmeric powder.

Heat a pan with oil for few minutes in a medium flame. Oil is used for frying the bitter gourd.

Add salted bitter gourd to oil and fry for 8-10 minutes.

Take fried bitter gourd from oil. Drain extra oil form it. In the same oil, fry the green chilies.

Add 5-6 table spoon of lemon juice. You can use vinegar instead of lemon juice.

Sprinkle little salt to the bitter gourd mixture.

Add pickle powder.

Now add the red chili powder and fried green chilies. Mix well and keep in sun for 2 days. Bitter gourd pieces are soaked well in lemon juice and salt. Pickle is ready. Store it in refrigerator for long days.
