Cabbage Fried Rice
Cabbage Fried rice is one of the easy and quick options at households. The variety of fried rice are made from India. Both vegetarian and non vegetarian options are available in this recipe which has its origin in the Chinese cuisine, but is very much a part of Indian kitchens now. Vegetable fried rice, mushroom fried rice, schezwan fried rice, egg fried rice, chicken fried rice are a few to be named.
Cabbage fried rice is an easy vegetarian fried rice that can be made in simple steps. Other vegetables are like as carrot and green peas can added to the dish. We can also choose to solely use cabbage. In this recipe we have added green peas. It gives a good appeal to the dish and adds to the overall taste.
As always with fried rice, the basmati rice is soaking for few minutes and cooked. You need to ensure the water is completely draining and the rice comes separately. Mushy rice would be the last thing we need in a fried rice dish. The cooking rice was cool down. Cabbage is finely chopping or even better grated to get really thin strands that would go well in the fried rice. Chopped onions, slit green chillies and ground ginger garlic paste are the ingredients we could prepare meanwhile.
Heat oil in a pan, add star anise and then add chopped onions and chillies. The anise would give a nice aroma to the dish. When the onions turn golden brown, ginger garlic paste and the fresh green peas are adding and mixing well. Next the chopping cabbage is adding to this mixture. A few drops of lemon juice can be adding at this juncture and stirred well. Steaming rice is adding along with salt and pepper powder and cooking for few minutes ensuring the consistency of the rice. The fring rice can be garnishing with chopping coriander leaves. Delicious fried rice is ready and can be serving with vegetable Manchurian, soya Manchurian,gobi 65 or similar dishes.

- Rice - 1 Cup
- Cabbage - 3/4 Cup
- Fresh Green Peas - 1/2 Cup
- Ginger Garlic Paste - 1/2 Tbsp
- Onion - 1 No.
- Green Chilly - 2 Nos.
- Pepper Powder - 1/2 Tbsp
- Salt - 3/4 Tbsp
- Star Anise - 1 No.
- Oil Or Ghee - 11/2 Tbsp
- Lime Juice - 1/2 Tbsp
- Coriander Leaves - 1/2 Tbsp
Rinse and soak the rice for ten to fifteen minutes and drained out water and keep aside,
Wash and chop some cabbage into thin or fine slices and also chop some onion,lengthy slice two green chilies,
Take a cooking pot add enough water for boil the rice and brings to boil the water,
When the water gets boiling now add those rinsed,soaked and drained rice with them,when the rice comes to 90 percent done,
Now remove from pan strain the rice to drained out the excess water in it and brings to cool for few minutes,
Now heat a pan add some oil or ghee with them and add one star anise lengthy sliced green chilies,
And the add some fine sliced onion slices with them and saute for few seconds till it comes to little transparent,
Then add little amount of ginger garlic paste with them,you may use ginger and garlic as thin sliced,
Then add 3/4 th cup of fresh or frozen green peas with them and stir for few minutes till turns to soft,
Then add fine or thin sliced cabbage slices with them and stir well for few minutes till it turns to light golden brown,
When the cabbage gets well saute then add half a tbsp of lime juice over them,which is to added for slight sour taste,
Then add the boiled and drained rice with them,the rice should be grained not to be mushy,
Then add enough salt and black pepper powder with them and keep on stirring carefully ,
Keep on stirring in high flame after add the rice to them,be aware about the bottom browning,
Finally add some chopped coriander leaves over them,garnish well and serve hot with spicy side dish.
