Chicken Kothu Parotta recipe:
Kothu Parotta is also a popular South Indian recipe. Parotta is a type of layered Flat Bread. This Non vegetarian Recipe has also many variants. We can cook this recipe with Eggs, Chicken, etc. Parotta, when we prepare with egg we may call it as Egg Kothu Parotta. And when we prepare them with Chicken we may call it as Chicken Kothu Parotta or Chicken and Parotta Stir Fry. There is also a variety where we use both Egg and Chicken. People may call it as Egg Chicken Kothu Parotta, Muttai Chicken Parota, Mutta Parotta, etc. There are other varieties of this recipe like Madurai Style Kothu Paratta, KaaraiKudi Egg-Chicken Paratha, Spicy Chilli Egg Kothu Parotta, Egg Minced Bread, Malabar Kottu Parotta, etc.
Cooking the recipe requires Moderate cooking skills. It takes around 30 minutes of time to cook. It serves as Main Course for lunch or dinner. This recipe can be made using leftover giving it a popular name Leftover Parotta.
The main ingredient of this recipe is Chicken. Chicken is important for health. It contains protein. The other ingredients of this recipe are Maida, Garlic Paste, Ginger Paste, Garam Masala Paste, Red Chilli Powder, etc. These ingredients enhance the flavour of Parotta and increase the health benefits too. This recipe in short is healthy and tasty.
We can easily prepare it at home or readily available at food stalls.Many people often will confuse this with Mughlai Parotta which is a North Indian Delight. Both are very tasty and nutritious to health. Mughlai Parotta unlike Kothu parotta serves as snacks or side dish. It is best enjoyed with friends and families.
- Paratha - 3 no.(large paratha)
- Chicken Breast - 1/4 Kg
- Garlic Paste - 2 tbsp
- Ginger Paste - 2 tbsp
- Chopped Green Chili - 1 tbsp
- Red Chili Powder - 1/4 tbsp
- Capsicum Chopped - 1/2 cup
- Coriander Leaves - 1 Sprig
- Garam Masala - 1 tbsp
- Chopped Onion - 1 cup
- Egg - 1 nos.
- Salt as per taste
- Turmeric Powder - 1/4 Tbsp
- Oil - 4 Tbsp
- Curry Leaves - 1 Sprig
- Vinegar - 3-4 Drops
Wash and clean chicken breast pieces, chop them into small cubes as shown in the image.
Chop the onion, green chili into small pieces. Make a paste of the ginger, garlic and garam masala. Then Marinate chicken with red chili powder, drop of vinegar, little garam masala powder and salt.
Heat oil in a kadai and add marinated chicken cubes, fry them till the color changes to golden. Add ¼ quantity of chopped onion, green chili, ginger and garlic paste. Mix and saute all the ingredients.
Keep aside the fried chicken masala. Shred the chicken pieces into small chunks. If any bons present means remove it.
Take leftover or fresh paratha.
Shred the parathas into small sized pieces. This would be help to cooked with the rest of the spices. Set aside the diced paratha.
Heat oil in a kadai and add remaining chopped onion, green chili, ginger and garlic paste. Saute till onion translucent. Add chopped capsicum, curry leaves.
Add fried chicken, red chili powder, pepper powder, garam masala powder. Sprinkle some salt. Saute well.
Add shredded parathas, combine well with masala mixture. Pour beaten egg to the mixture, stir continuously so that the masala do not stick to the bottom and the egg is also cooked. Now the kottu paratha is ready to be served after garnishing with coriander leaves.
