You can add vegetables of your choice – potatoes, onion, capsicum, peas, carrots, tomatoes, corn and exotic veggies like broccoli or even paneer. The chutney is a composition of pudina leaves and coriander. Green chilies will add the necessary spice and retain the green colour without having to add red chili powder which makes the rice sort of red. Make the chutney mix well in advance so that you can stir fry the pre-cooked rice last minute, before you serve. You can even cook the rice with the veggies. Once you have sautéed the vegetables, add the chutney and rice. Once the rice and vegetables are cooking to perfection, squeeze lemon juice and it is ready to serve.   • Rice - 1 Cup
  • Mint Leaves - 1/2 Cup
  • Coriander Leaves -1/2 Cup
  • Ginger Slices - 1/4 Cup
  • Garlic Cloves - 7 Nos.
  • Green Chilies - 4 Nos.
  • Coconut Slices - 1/4 Cup
  • Clove s- 3 Nos.
  • Cinnamon - 2 Nos
  • Bay Leaf - 1 No.
  • Star Anise - 1 No.
  • Salt - 3/4 Tbsp
  • Lemon Juice - 1 Tbsp
  • Ghee Or Oil - 3 Tbsp
  • Onion - 3 Nos.
  • Carrot - 1 No.
  • Potato - 2 Nos.

Method

Rinse well a cup of rice and soak them for fifteen minutes and drained out the water,

Wash and chop the vegetables such as onion,carrot,potato,ginger garlic,green chilies,and some coconut into desired slices.

Wash and chop some mint leaves and coriander leaves which are the main flavor added to this recipe,

For Green Chutney: Take a mixer jar add those chopped mint and coriander leaves and add some ginger garlic coconut slices and enough green chilies,

Grind well the added ingredients into a fine paste,you may add little water if needed,

For Chutney Pulao: Heat a pressure cooker add some ghee or oil with them and add the spices ingredients such as cloves,cinnamon,star anise and bay leaves,

Then add some thin sliced onions with them and stir well till it roasts well,

When the onion gets well saute then add the freshly grounded green chutney into them and stirwell till the raw smells out,

Then add those chopped veggies into them and stir foe few minutes,you may add some other veggies such as green peas,florets etc,

Then add well soaked,rinsed and drained rice into them,drained the water well before added into them,

Roast well the added rice for few minutes which helps the rice remains grained and not to get mushy,

Then add enough water where the water is to be in 1:2 ratio for pressure cook and add enough salt,

Cover the lid and pressure cook them for two whistles and open the lid when the pressure downs,

Now add one tbsp of freshly extracted lemon juice into them which is the major ingredients used for sour taste,
