Gawar sabzi or cluster bean curry is a delicious vegetarian dish that is common in many Indian households. The recipe is also easy to prepare and requires a minimal number of ingredients and very little time to cook. In India, gawar sabzi is usually prepared slightly differently depending on the region and place. Cluster beans carry with them a lot of health benefits especially for pregnant women owing to the high nutritional value. This form of legume has Vitamins A, B & K and also contain potassium, calcium, fibre, folate, and iron making it a wonder vegetable.
Gawar bean curry is a great dish to serve your vegetarian guests as it is 100 percent vegetarian and is healthy. This can be served as a side dish to accompany other vegetable preparations that you might have made. Be it cluster beans curry Andhra style or Sindhi style, the preparation and cooking time is less and whichever way it is made, it is best served along with rotis, phulka, boondi raita, dal rice, or even with curd rice. - Gawar beans - 1 Cup
- Bengal gram - 1/4 Cup
- Turmeric powder - 1/2 Tbsp
- Oil as required
- Salt as required
- Cumin - 1/2 Tbsp
- Water as required
- Red chili powder - 1/2 Tbsp
- Mustard seeds - 1/2 tbsp
Take the gawar beans wash them. And chop into small pieces of required size for the preparation.
Take bengal gram soak in water for about 1 hour before the preparation process so that the recipe is simple to do.
Take the pressure cooker and pour some water and place the vessel containing bengal gram inside the cooker.
Close the pressure cooker and cook for 5 to 8 minutes in a medium flame.
Now open the cooker and pour the content into the holed bowl in order to settles down all the water from the bengal gram.
Take those chopped gawar in the bowl and add salt as required and mix well until the salt dissolves in it.
Take a pressure cooker pour some water into it and put this bowl of gawar pieces inside the pressure cooker.
Close pressure cooker for 5 to 8 minutes and keep the stove on a medium flame .
After they are boiled take those into the holed bowl, drain extra water from it.
Take a pan pour required oil and made the oil to heat in the pan for sometime.
Add 1/2 tbsp of cumin and 1/2 tbsp of mustard seeds and fry in the oil.
Now add both the boiled dal and veggies to the pan and add 1/2 tbsp of turmeric powder to it and mix well.
Add 1/2 tbsp of coconut powder to it and mix well.
Add 1/2 tbsp of red chili powder and mix well.
After that add salt as required and mix well in a low flame. Cook it till semi dry. Now the Gawar Sabzi is ready to serve.
