Papad or Papadum is a typical Indian recipe which is unique all over the world. It is a thin, disc shaped food which is very crispy. There are various types of Papad available throughout Indian. So, one such Papad recipe is Ragi Happala. It is called by various other names like Finger millet Pappad Recipe, Huruli Hapala Recipe, Ragi Pappadam, Homemade Ragi Happala, Spicy healthy vadam, etc.
Ragi Happala requires expert level cooking skills. It is mainly served as a side dish, that is to be served with the main course or it can also be taken as snacks for time pass. Ragi or Finger Millet Flour is the main ingredient of this recipe. It is first kneaded into dough and then rolled into thin discs. Then it is dried under sun for almost 2-3 days. So, in this preparation no oil is required, making it a tasty and healthy preparation.
Ragi is very nutritious in nature. Also it contains Carbohydrates, Protein, Fibre, Fat etc. It also contains good amounts of calcium and iron in it. Ragi Happala is completely gluten free making it edible for patients of diabetes. Happala best accompanies with Sambar rice, Curd rice, Tomato Rasam, Tamarind rasam, Kollu Rasam, Vegetable sambar, etc. The crispy Ragi Happala goes well with any dish making it an instant favourite.

- Ragi Flour - 1 Cup
- Water - 1 Cup
- Black Pepper - 1 Tbsp
- Cumin Seeds - 1 Tbsp
- Salt as needed
- Oil - 1 Tbsp
Take a cup of ragi.
Heat a pan with a 1Tbsp of oil, fry black pepper for 2 minutes. Take it out.
In the same oil, fry cumin seeds.
Make coarse powder of black pepper and cumin seeds by using mortar and pestle.
Mix the powder with 1 Tbsp of salt.
Add this cumin and pepper mixture with a ragi flour and add a cup of water. Then mix it well with hand or spoon. Make sure, mixture without any lumps.
Mixture should be in pinching consistency. Make it as a small sized balls.
Take a rolling board and flatten a small sized ball into happla.
Spread the Flattened small sized ball to cotton cloth. Sun dry the happla till moisture free. It will take about 2-3 days.
When we want side dish to sambar, rasam. Oil fry the dry ragi happla and enjoy the meal.p class="simage">
