Javvarisi Payasam/Sabudana Kheer recipe:
Sabudana Kheer or Javvarisi Kheer is a common dessert made during festivals (especially Navratri) in Maharashtra and South Indian cuisines. It’s an easy to make, creamy pudding with sago pearls, generally flavored with raisins and cardamom.
Kheer is a classic Indian dessert. It can be devoured during festivals, fasts and will generously satisfy your sweet cravings. Shabbaki Kheer or Javvarisi Payasam is one such derivate of Kheer. It’s an appetizing and fulfilling dish during fasting. Other types of Kheer made are Badam Kheer, Rice Kheer, Vermicelli Kheer.
Some variation to Sabudana Kheer Recipe can be the flavors you add – dry fruits (pistachio, cashews), rose water, pineapple enhance the flavor and make it exotic. In this recipe, we have only added raisins and ghee for depth in taste. You can use Milkmaid and replace the milk and sugar option. However, if you don’t find it sweet enough, add sugar as per your requirement.
Sabakki Payasa Recipe is also made with jaggery instead of sugar. This sweetening option is the healthiest and you can feed this dish to babies as Sago has high calcium content. However, remember to cook this dish on a low flame as sabudana tends to stick to the pot.
Sabudana, Sago or Tapioca is a good source of protein and helps in muscle building, healing and strengthening. Rich in calcium and iron and helps bone growth. Keeping these benefits aside, Sabudana Kheer simple and also taste. Almost everyone’s favorite in preparations like Subudana Khichdi, Subudana vada, Subudana tikki , Sabudana thalipeeth and Subudana ladoo.
- Sabudana - 1 Cup
- Sugar - 1/2 Cup
- Raisins - 1/2 Tbsp
- Ghee - 1Tbsp
- Water as required
- Milk - 2 Cups
First of all take the Subudana and soak in water for 2 to 3 hours before the preparation process only to made the recipe easier.
Pressure cook sabudana for 1-2 whistles.
After boiled take this out and drain excess water. Pour fresh water and Keep it on a stove. Cook in low flame for sometime by stirring this with a spoon frequently.
If it becomes very thick substance, add water as required to it and boil for some time in a low flame.
After that add 1/2 cup of sugar to the bowl and mix well until the sugar dissolves.
Take 2 or 3 cups of milk in another vessel and boil the milk in a high flame .
Add boiled milk to the bowl containing the subudana and mix well.
Leave it calm for sometime on the stove in a low flame.
Add 1/2 tbsp of raisins and mix well. Again boil for sometime in a low flame.
Before put off the stove add 1 tbsp of fresh ghee to it and mix well. Now the Subudana or Javvarisi Kheer is ready to serve yummy.
