This cuisine is also famous for its Hot and savoury dishes. Kashmiri Veg Pulao, as the name suggests is one of the famous dishes originating from the Kashmiri cuisine. It is also called by various other names like Kashmiri Pulao Veg, Kashmiri Pulao, Kashmiri Pulao Recipe, etc.

Kashmiri Veg Pulao is also known for its mild taste. Yet Pulao preparation is mainly served as main course during lunch or dinner. And it goes well various other preparations like, Lauki Yahni, Onion Tomato Raita, Mango Raita, Pomegranate raita, Onion Raita, Mint Raita etc.

Preparing Kashmiri Veg Pulao requires Intermediate level cooking skills. The total time taken in preparing and cooking this recipe is around 1 hour. The main ingredients of this recipe are Basmati Rice, Garam Masala, Saffron and Paneer. Basmati rice is fragrant rice which induces a heavenly smell into the recipe. Garam Masala increases the flavor of this preparation and so Saffron is added to give colour to this preparation. Baby corn, potato and carrot are also healthy and increases the flavor of this recipe. Kashmiri veg Pulao also contains ghee and oil, making it high cholesterol and high calorific diet. So, persons who are health conscious and who suffer from heart ailment need to be careful while eating it.

Ingredients

  • Basmati rice - 1 Cup
  • Medium size Tomato - 1 no.
  • Medium size Onions - 1 no.
  • Green chilli - 2 nos.
  • Jeera - 1 Tbsp
  • Bay Leaves - 2 nos
  • Cloves - 4 nos
  • Cinnamon - 1 no.
  • Baby Corn Chopped - 2 nos
  • Carrot - 1 no.
  • Potato - 1 no.
  • Ginger - 1 Inch
  • Cardomom - 2 Nos
  • Cashewnuts - 4 Nos
  • Raisins - 4 Nos
  • Water - 1 Cup
  • Garam Masala - 1 Tbsp
  • Saffron - 1 Pinch
  • Milk - 2 Tbsp
  • Curd - 1 Tbsp
  • Salt as needed
  • Oil as needed
  • Chopped Apple - 1/4 Cup
  • Pomegranete - 1/4 Cup
  • Black Grapes - 4 nos

Method

Step 1

Slice carrot, potato into long sticks. Remove seeds from tomato and finely chop.

Chop onion and baby corn.

Heat a pan with a oil. Add bay leaves, cinnamon and jeera. Fry till it emit good aroma.

Add one chopped onion and two chopped green chilies. Saute till it turn golden colour.

Add chopped tomato, saute it well. Then add chopped carrot, chopped potato in onion, tomato mixture.

Slower the flame, add 1 Tbsp of garam masala powder.

Meanwhile mix pinch of saffron with 2 Tbsp of milk. Keep it aside.

Add 1 Tbsp of thick curd, mix the mixture well.

Add a cup of soaked basmati rice and saffron milk. Mix it well. Add enough water to cook rice and salt as required.

Cook the rice well done. Fluffy the rice with spoon. Transfer the rice to serving plate and garnish it with a colourful fruits and serve it.
