- Chopped Carrot - 1/2 Cup
- Chopped Beans - 1/2 Cup
- Chopped Potato - 1/2 Cup
- Green Peas - 1/2 Cup
- Grated Coconut - 1 Cup
- Grated Ginger - 1/4 Cup
- Green Chilies - 3 - 4 nos.
- Cloves - 2 nos.
- Fennel Seeds - 1 Tbsp
- Salt as for taste
- Oil as required
- Cardomon - 2 nos.
- Lemon Juice - 1 Tbsp
- Mint Leaves - 1 Sprig
- Coriander Leaves - 1 Sprig
First of all take a mixie jar and add 1 cup of grated coconut and grind it using hot water and extract the coconut milk and separate as first, second and third coconut milk.
In a cooking bowl take the chopped vegetables such as carrot, beans and potatoes.
Then add green peas, green chilies and then add the second and third coconut milk extract and add salt as required.
Then add grated ginger and mix well then cover it with lid and keep it to boil for 15 minutes till the vegetables are well cooked.
After the vegetables are well cooked add 1/4 tbsp of lemon juice, mix well and cook for few minutes for the gravy gets tender consistency,
After that add the first stage coconut milk extract and mix well. Keep it to boil for few seconds and then transfer to the serving bowl,
For Tempering: Heat oil and then add Fennel Seeds, cloves, cardamon sticks and pour them into that vegetable gravy and mix well till the vegetables are mixed together
Then finally add mint leaves and coriander leaves and serve hot with Aappam or with Dosa. It is also best companion with Idiyappam, Neer Dosa.
