Coconut bun Recipe:

India is a country which is rich in flavour. Almost anywhere you go, you will find some sort of unique flavour associated with that place. Such is our Coconut bun.  It is a popular Indian sweet recipe originating in Kerala, known by many other names like Kobbari rotti, Kobbari bun, Coconut Rotti, Tenga bun, Vattayappam, Coconut rice cake. Coconut bun are widely consumed in the region of South India making it delicacy over there. It can be homemade or can be bought at sweet shops.

Coconut bun are sweet and delicious delight which we will prepare during eve of festivals like Christmas or can cook it as lunch box preparation. They are considered healthy because they contain jaggery which is rich in iron. Coconut in itself is full of nutrients, it contains iron, manganese, zinc and various other salts considered healthy for consumption. Sweet to taste and rich in nutrients make it a healthy food in whole.

Preparing Coconut Bun require expert level cooking skills, taking up to 4-5 hours of time. Its main ingredient is Rice Rava and it contains ghee, making it a high cholesterol diet. So it is not for those suffering from heart ailments. But who cares these is absolutely delicious.

Various other recipes that come to mind while thinking about coconut buns are Coconut rice, coconut chutney, coconut milk etc. Each of them have their own specialities and can hold their ground against Coconut Buns. As it is full of nutrients we consider it as healthy preparations. But nothing compares when it comes to the sweetness of Coconut Buns. Children and Adults of all ages like Coconut Buns and crave for more. For a lot of adults Coconut Buns are sweet reminiscence of their childhood when they enjoyed it with their friends, siblings and family.

Ingredients

  • Rice Rava - 1 Cup
  • Chopped Jaggery - 1 Cup
  • Water - 4 Cup
  • Ghee - 3 Tbsp
  • Grated Coconut - 2 Cup

Method

Step 1

Take a cup of rice, Soak it for 4-5 hours. Shade dry and then grind it into coarse powder as rava. Rice rava is ready.

Dry roast the grinded rice rava.

Scrap coconut, great jaggery into fine pieces. Keep it aside.

Heat a pan with 4 Cup of water, boil well.

Add the scraped coconut to boiled water.

Simmer the flame, slowly add the rice powder. Stir well to avoid lump formation.

The mixture starts to boiling, at this time add grated jaggery. Stir well, make sure jaggery melts. More pressure needed to mix, very hard to mix large quantity.

Steam cook the cake for 10-15 minutes. For 1-2 whistles. Heat a another pan with 2 Tbsp of ghee and fry the cake. Insert the fork to check, it comes out clean means that indicated it is done.

Fry on the both sides. This step give fried outer layer with ghee flavour. You can quit this step.

Transfer it to plate and cut into desired shapes, yummy taste coconut bun is ready to taste.
