Egg curry (also known as Anda curry) is quite popular not just in India but also across the globe. The thought of egg, the feel of aroma in this curry can’t stop you from mouth-watering.This egg curry is tempered and added with ingredients like onions and coconut paste that will be a perfect recipe with rice, roti, chapatti and paratha. Egg curry is a kind of egg recipe that can be cooked even by a beginner and takes an average of 30 mins for preparation and can be served for 4 persons.
Egg curry also goes well as side dish with Jeera, Pudina, Ghee, Dal, Tomato Rice, Veg Pulao, Kuska and Biryani. An Ultra-rich curry that can be served to unexpected guest visits to home or changing kids demand from time to time.Ingredients mainly include fresh eggs, oil, salt, chopped onions, green chillies, tomato, garam masala, red chili powder, turmeric powder, yogurt and salt.
Fresh eggs can be identified by soaking eggs in water, the fresh eggs sink down while the stale ones float. Egg is the perfect source of proteins for humans. - Eggs - 2 nos.
- Chopped Onion - 1 Cup
- Chopped Greenchili - 1 Tbsp
- Chopped Tomato - 1/2 Cup
- Yogurt - 4 Tbsp
- Salt as needed
- Garam masala (or) chicken masala - 2 Tbsp
- Oil - 2 Tbsp
- Water - 2 Cup
- Red chilli powder - 1/2 Tbsp
- Turmeric powder - 1/4 Tbsp
Boil the eggs with 2 cups of water with addition of some salt.
Chop all the veggies [ onion, green chilly , & tomato]. After completely boiled the eggs. Remove it from the flame then Remove the egg shell. keep it set aside
Heat the kadai, then add 2 spoon of oil. After the oil heats up add chopped onion & green chilly fry it for 10 mins, mix together very nicely.
When it turn golden brown colour, add chopped tomato mix it well & cook it for 5 mins ,
When tomato almost to cooked completly and mashed with onion, after that add 4 table spoon of yogurt & mix it well. Alternate for yogart you can use cashews past or coconut milk. Then cook it at least 5 mins,
After that add garam masala or chicken masala, red chili powder and pinch of turmeric powder. Saute it well. Add some water to make the curry consistency.
Mean time, Vertically Cut the boiled eggs into two halfs. Spread some masala on the surface of the egg to enhance the taste.
When all the veggies completely cooked & all masala also cooked well. Add chopped egg. keep like this atleast 10 mins. Dont over stir.
After some few minutes, the curry cooked well and coated with eggs. Taste and spicy Egg masala curry is ready to serve.
