Matar Pulao Recipe
Matar Pulao Recipe is a flavorsome rice recipe made from fresh green peas. The preparation is easy and the flavor is delightful. It is one of the easiest choices for those who want simple recipes prepared in less time. Other recipes that have similar methods are vegetable pulao, paneer pulao, Kashmiri pulao and so on.
First, you have to rinse and soak the rice in water for few minutes. Chop onions garlic ginger and mint leaves and green chilies. Heat the pressure cooker and add ghee to it.The ghee melts, add the ingredients star anise, cloves, cinnamon sticks and bay leaf. Add the chopped ginger and garlic and sauté them. Add the chopped green chillies and sliced onions. The ingredients the onion turn glassy.
Next, add the fresh green peas – the main ingredient that gives the name to this recipe. Along with this, add mint leaves, which give a unique flavor to the dish. Now, add the soaked and drained rice to the pressure cooker. Stir well the rice is slightly roasted. This prevents the rice from becoming mushy. The aroma of the ingredients combined with the basmati rice. Add water in the ratio 2:1. This would mean two cups of water for one cup of basmati rice. Add the required amount of salt. You can add fresh yoghurt at this stage.
After this, cover the lid of the pressure cooker and allow three or four whistles on medium flame. switch off the heat and allow the pressure to escape. Now, open the lid and add a tablespoon of lemon juice. Mix using a fork or ladle. The easy one pot recipe is now ready. Serve hot with curd, raita or pickle.

- Bullet Or Basmati Rice - 1 Cup
- Onion - 2 Nos.
- Ginger Slices - 1/2 Tbsp
- Garlic Slices - 1/2 Tbsp
- Green Peas - 3/4 Cup
- Cloves - 2 Nos.
- Cinnamon Stick - 2 Nos.
- Bay Leaf - 1 No.
- Star Anise - 1 No.
- Mint Leaves - 1/2 Cup
- Lime Juice - 1 Tbsp
- Ghee Or Oi -l 2 Tbsp
- Salt - 1 Tbsp
- Green Chilies - 3 Nos.
Rinse and soak one cup of steamed or basmati rice in water and drain out the water.
Bring some fresh green peas, chop some onion, ginger, garlic into small pieces, and clean some mint leaves and green chilies.
Heat a pressure cooker, melt some ghee and add the spice ingredients such as star anise, cloves, cinnamon sticks and bay leaf.
Then add some garlic and ginger slices into them and roast them well for few seconds.
Then add some sliced onions and green chilies with them and roast them well until it becomes golden brown color.
Then add fresh green peas with them and stir for few seconds until it is little roasted.
Then add some mint leaves with them and mix well to get the refreshing flavor to this rice.
Then add soaked and drained rice, be sure that the water is completely drained before adding with them.
Roast well the added rice for few seconds until it is roasted which prevents the rice from becoming mushy.
Then add enough water in 1:2 ratio, two cups of water for one cup of rice.
Add enough salt for them and stir well, you can also add some fresh yogurt at this stage if needed.
Cover the pressure cooker lid and allow three whistles in medium flame.
After the pressure comes downs itself, remove the flame and sprinkle one tablespoon of lime juice with them.
Mix the rice evenly using a ladle or fork spoon and serve hot with tasty curd or vegetable raita.
