Indian cuisine is famous all across the globe. It consists of variety of dishes, flavour and ingredients that are natural produce of India. Methi or Fenugreek is a vegetable naturally produced in India. Methis is used in many dishes. Methi recipes are generally famous in North India. In all the Methi dishes Methi Stir Fry is has a place of its own. This recipe is called by many name like Methi leaves stir fry, Fenugreek leaves stir fry, Methi sabzi, Methi Ki Sabzi or Methi saag. It is also called vendhaya keerai poriyal in tamil and Methi kura vepudu in Telugu. When Methi is cooked with Drum Sticks it is called Methi palle upakari in Konkani.
Methi Stir Fry is an easy to cook vegetarian recipe. It takes around 30 minutes of time to both cook and prepare it. This recipe is eaten as Main Course or Side dish for both Lunch and Dinner. It goes very well with Rice, Roti or Chapatis. One can cook this recipe as lunch box preparation also. The wonderful taste of this recipe has a class of its own.
As the name suggests the main ingredient of this recipe is Methi. Methi is very nutritious leafy vegetable. It helps in lots of health issues like Anaemia, loss of taste, fever, stomach disorder, respiratory disorders, etc. It is also helpful in curing Diabetes. Other ingredients Coconut, Urad Dal, Garlic, Green Chillies and Onions make this dish more palatable and healthy.
Methi preparations are huge part of traditional Indian Cuisine. One may say that Methi preparations carry a rich heritage. Methi preparations are generally prepared in homes but can be enjoyed in small restaurant or food stalls. Methi with Roti is simply blissful in hot summer.
- Methi Leaves - 1 Cup
- Grated Coconut - 1/2 Cup
- Green Chili - 3-4 nos.
- Garlic - 5 Cloves
- Chopped Onions - 1 Cup
- Oil - 2-3 Tbsp
- Salt as per taste
- Mustard seeds - 1/2 Tbsp
Take a 1 cup of methi leaves, clean with water twice, Take 1 cup of chopped onions, grated coconut, green chilies and garlic all are together taken in a plate.
Great the coconut and kept aside.
Fry the leaves in a pan on low flame until they water has dried up from the leaves. Leaves Tend to become dark and soft in texture. This process give amazing flavour to the recipe.
Heat cooker with some oil, add ½ spoon of mustard seeds, wait to splutter. Saute the chopped onions and garlic until become golden color.
Put the grated coconut, chili and salt in it and cook for sometime till the coconut becomes soft.
Add the methi leaves and sprinkle some water to cook. cover Cook for few minutes. Open the cooker and stir fry the mixture. Change the methi dish from cooker to a bowl and serve with hot steamed rice.
