Mysore Masala Dosa
Mysore masala dosa recipe is one of the well known breakfast options in south India. Having originated in the state of Karnataka, it is famous all over the country. It has different versions according to their taste and preferences. Rava dosa, green gram dosa, ragi dosa, wheat dosa, tomato dosa, set dosa, podi dosa are some of the variations.
The authentic Mysore masala dosa recipe is a crispy dish from outside, soft on the inside coated with spicy red chutney and filled with potato sabzi. It is served with coconut chutney and sambhar. The recipe make at home and the most of the restaurants.
The dosa batter is preparing similar to plain dosa. Steamed rice or poha is adding for the softness. The red chutney is preparing using channa dal, roasted peanuts, garlic pods, a small amount of tamarind, red chillies and onion if required. All ingredients are graining in a fine paste with little amount of water and kept aside.
The potato sabzi is preparing following method. The potatoes are boiling, peeling and smashing as the first step. Heat oil in a pan and allow mustard seeds to splutter. The,add chopped onions, green chillies and curry leaves. The onion turns translucent, add the smashed potatoes and turmeric powder and asafetida. Add little water and allow to cook for few minutes. The tasty sabzi is now ready.
The final step is to make the dosa. Heat the dosa pan and spread few drops of oil. The fermenting batter is taken in the ladle and the placing in centre of pan and spread out in a circular shape. If you want the dosa to be crispy, can spreading the batter as thin as possible. Cover with a lid for the dosa to be cooking. When base are brown and top is cooking, and spread a spoonful prepared red chutney potato sabzi the middle of the dosa and spread little. The hot and delicious recipe of Mysore masala dosa are ready and to be serving.

- Rice Batter - 1 Cup
- Potato - 3 Nos.
- Onion - 1 No.
- Green Chilly - 2 Nos.
- Turmeric Powder - 1/4 Tbsp
- Roasted Peanuts - 2 Tbsp
- Garlic Pods - 4 Nos.
- Dried Red Chilly - 4 Nos.
- Coriander Leaves - 1/2 Tbsp
- Salt - 11/4 Tbsp
- Butter - 1/2 Tbsp
- Ghee Or Oil - 1 Tbsp
- Mustard Seeds - 1/4 Tbsp
- Cumin Seeds - 1/4 Tbsp
- Curry Leaves - 4 Tbsp
For Red Chutney: Take a mixer jar add some roasted peanuts,some garlic pods and enough red chilly powder and little tamarind with them,
Add enough salt and water for them and grind it well as fine paste,you may add some roasted onions if needed,
For Potato sabzi: Heat a pan add some oil and some mustard seeds and green chilies and some curry leaves with them,
Add some onion slices and little turmeric powder and stir well for few seconds till the raw smells out,
Then add little water and add enough salt for them and brings to boil for few seconds,
Then add boiled and smashed potato slices and fine chopped coriander leaves with them and stir well,
You may add few drops of lime juice over them and keep aside the prepared potato sabzi,
For dosa batter Preparation: Take a cup of fermented rice batter to a mixing bowl and,
Add enough salt in a ladle and add little water where the salt needs to dissolve in it,add them to that rice batter and mix well till it mixes well together,
For Masala Dosa Making: Heat a flat pan or tawa crease some oil add two heaped spoon full of dosa batter over the tawa,
Spread the poured batter as thin round shape using a ladle,better to spread thin layer which makes the dosa crispy,
Take one spoon full of prepared red chutney and spread over the dosa,add some more chutney if needed,
Then place one heaped spoon full of prepared potato sabzi over them and spread all over the dosa,
Pour some oil or ghee over them and fold them as slight corner half fold,
Again fold the other half end which faced to center,that i have shown in the picture,topping some butter and serve hot.
