Aloo palya or potato palya is a famous South Indian recipe. Commonly known as potato bhaji in Maharashtra, potato palya in Kannada or aloo ki sabzi in North, it is extremely easy to make. There’re countable number of ingredients; for seasoning only salt and onions & cumin seeds are used in tempering. Green chilies lent this spicy element.
Now, precook the potatoes can make you quickly stir fry the aloos when you set the table. Either pressure-cook the potatoes or boil them in water, although the cooker method is faster. - Potato - 3 Nos.
- Green Chilly - 2 Nos.
- Onion - 1 No.
- Cumin Seeds - 1/2 Tbsp
- Oil - 11/2 Tbsp
Take three medium sized potatoes and add them to a pressure cooker and brings to boil for four whistles,
When the potato is boiled then peel off the skin and chop them as small cubes and also chop one onion and green chilies,
Heat a pan add some oil and splutters some cumin seeds and add green chilies and chopped onions with them,
When the onions are transparent then add the boiled,peeled and chopped potato slices with them,
Then add enough salt for them and keep on stirring till the salt and flavor are well absorbed by the potatoes,
Finally add some chopped coriander leaves and serve hot with tasty butter dosa or any type of roti.
