Brinjals or eggplants are known to be among the most important fruits (considered a vegetable by many) as they are the perfect remedy for the human heart. Brinjals are rich in fiber, potassium and Vitamin B-6 which are essential for reducing the risk of heart diseases which have become a common health issue. In India many people considers, brinjals or baingans as the important vegetable for many various dishes. One of the tastiest dishes to prepare with brinjals is baingan bharta. Not only does it smell great, it tastes delicious too. Baingan bharta, a type of curried grilled eggplant has gained popularity in many parts of India besides North India. And we can cook it slightly different according to the region.
It also takes around 30 minutes to make and can served alongside rice, phulka or parathas. Baingan ka bharta is primarily a vegetarian dish and this is what makes it a favourite in most Indian households. We can also cook it without masalas and spices making it even healthier to eat.
Another tasty recipe made with brinjals is roasted egg plant lasagna. An Italian dish, roasted egg plant lasagna can be cooked using healthy ingredients and excluding other ingredients such as lasagna pasta to create a low calorie dish. We can cook Brinjals in many different ways as like brinjal curry, brinjal chutney. And although a lot of people tend not to like the taste, its benefits are treatment to the fact that it is one of the most important vegetables that are necessary to include in every person’s diet.
- Large size Egg Plant - 1 no.
- Chopped Onion - 1/4 Cup
- Chopped Tomato - 1 no.
- Green Chili - 2 nos.
- Chopped Coriander Leaves - 1/4 Cup
- Salt as needed
- Turmeric Powder - 1/4 Tbsp
- Oil - 2 Tbsp
Clean wash the baingan, apply some drops of oil over the brinjal and roast it on open flame.
Completely cook all the sides till tender, the skin colour turn to blackish brown in nature.
Chop all the veggies needed for this recipe. As like onion, tomato and green chili.
When brinjal is cooked well, take it out from flame. Let it cool for sometime before it can be peeled.
Peel the skin of the roasted brinjal, then mash with hands to form a smooth and uniform mixture.
Heat oil in a kadai, add chopped onion and green chili. Onion turn translucent.
Add chopped tomatoes, salt and turmeric. Saute tomatoes well till they are softened and almost melts. Mix very well and stir.
Add mashed brinjal, stir and mix the mashed brinjal with onion tomato fried masala.
After cooking for 2-3 minutes, the dish is almost ready. Add the chopped coriander leaves, it give nice aroma.
