Veg Bonda Recipe is a well-known south Indian snack, which is prepared in households eateries. You can choose the vegetables of your choice for the recipe. In our recipe, we will use potatoes, carrots and green peas. Some of the other famous snack items are egg bonda, bajji, aloo bonda, medhu vada.

Ingredients of veg bonda recipe

Fine chop all the vegetables and pressure cook the potatoes, carrot and green peas.They are soft, smash using a ladle. Heat oil in a pan and add mustard seeds, sliced green chillies, chopped ginger and onions.onion turns transparent and ad the smashed vegetables. Add turmeric powder, salt to the mixture and stir well. Sprinkle fine-chopped coriander leaves and half-tablespoon lemon juice and mix well. Allow the contents to warm down and our vegetable stuffing is ready.

Preparation of Batter

Next, we will prepare the outer batter. Take the Bengal gram flour in a mixing bowl along with rice flour. Add red chilly powder, garam masala, cumin powder, required salt and a pinch of hing and mix well. Add water slowly to this mixture and prepare the batter without any lumps. The consistency should be that of the dosa batter.

Now, it is time to fry the bonda. Heat oil in a pan for deep-frying. Take small quantity of the vegetable stuffing in ball shape and dip it into the prepared batter. Place it in the oil for deep-frying.  Repeat the same for the remaining vegetable stuffing. Flip using a ladle to get uniform cooking on all sides. Fry the outer layer is golden brown in color. You can remove the excess oil by placing on a kitchen tissue. The scrumptious veg bonda is now ready and the heavenly smell is inviting! Serve hot with spicy chutney, coconut chutney or sauce.

Ingredients

  • Potato - 2 Nos.
  • Carrot - 2 Nos.
  • Green Peas - 1/4 Cup
  • Onion - 2 Nos.
  • Green Chilly - 2 Nos.
  • Ginger Slices - 1/2 Tbsp
  • Mustard Seeds - 1/4 Tbsp
  • Turmeric Powder - 1/4 Tbsp
  • Bengal Gram Flour - 3/4 Cup
  • Rice Flour - 2 Tbsp
  • Red Chilly Powder - 1/2 Tbsp
  • Garam Masala Powder - 1/4 Tbsp
  • Cumin Powder - 1/4 Tbsp
  • Salt - 3/4 Tbsp
  • Coriander Leaves - 1/2 Tbsp
  • Hing - 1/4 Tbsp
  • Oil - 11/2 Cup
  • Lime Juice - 1/2 Tbsp

Method

Step 1

Wash and chop all the veggies such as potato and carrot along with fresh green peas.

Fine-chop one or two medium sized onion, green chilies, ginger and coriander leaves.

Steam cook or pressure-cook the veggies such as carrot, potato and green peas until it becomes soft.

For veggie stuffing: When the vegetables are little warm smash them well using a smasher or using a ladle.

Heat a pan, add little oil and some mustard seeds, fine sliced green chilies and ginger slices.

Then add fine chopped onion with them and fry for few seconds until it becomes glassy and transparent.

Then add the steam boiled and smashed veggies into them and stir for few seconds.

Then add little turmeric powder and enough salt for them and stir well again until it mixes well.

Then add some fine chopped coriander leaves and stir well again for few seconds.

Then sprinkle half tablespoon of lemon juice over them, stir well again and switch off the flame.

When the veggie mixture becomes a little warm, divide into small portions and make small balls.

For Outer Batter: Take a mixing bowl, add 3/4 cup of Bengal gram flour and 2 tablespoon of rice flour.

Add the spice powders such as red chilly powder, garam masala powder, cumin powder, salt and a pinch of hing with them.

Add water and slowly mix the batter without any lumps, the batter should not be too thin or too thick, it should like dosa batter.

Heat a pan, add one and half cup of oil for deep-frying, and now take one prepared ball sized vegetable dough.

Dip the dough into that gram flour batter, better to use a spoon for this.

Place the bonda dough onto the hot oil,do this for all dough for make all these bonda,

Deep fry the stuffed vegetable bonda and brings to boil on both sides by flip them around,

When the outer flour turns light golden brown now remove from flame and serve hot with spicy chutney or sauce.
