Vegetable cutlet recipe

Almost every region or country has their own form of cutlet. This is because cutlets are so versatile that you can customize the filling as per your diet or taste. Cutlets or commonly known as patties, are usually finely chopped veggies mixed with mashed potato and flour for binding. You can deep fry or shallow fry them and enjoy with ketchup or green chutney. There is no one specific good vegetable cutlet recipe. If you know your way around the kitchen, there will be no end to the variations you can make to a standard vegetable patties recipe.

In our version, we use egg and breadcrumbs to coat the patties. Once fried, this coating will give them a crispy and crunchy texture. However, patties or cutlets are always served best hot out of the frying pan. You can shape them in rounds or squares and fry only when your guests have arrived.

Onions, potatoes, peas, beans, carrots, capsicum are the base for any cutlet. If you want something different, paneer or mushrooms can also serve the purpose. Season cutlets mildly with spices like turmeric powder, red chilly powder, coriander powder, green chillies and even some chaat masala. Too much masalas can over power the original taste of vegetables so avoid adding too many ingredients and keep it simple. Using this spice mix as the base you can make Corn cutlets, Moong daal cutlet, Paneer cutlet, Kheema or chicken cutlet. For achieving a high protein cutlet content, use soya chunks instead of potatoes.

This is a snack we can easily make at home . It is very yummy and healthy.

Ingredients

  • Carrot - 1 Cup
  • Green Peas - 1/2 Cup
  • Beans - 1/2 Cup
  • Onion - 1/4 Cup
  • Oil 1/2 Cup
  • Potato - 2 Nos.
  • Egg - 2 Nos.
  • Breadcrumbs - 1 Cup
  • Ginger- 1 Tbsp
  • Green Chilly - 5 Nos.
  • Turmeric Powder- 1/2 Tbsp
  • Salt - 1/4 Tbsp
  • Redchillypowder- 1/4 Tbsp
  • Coriander Powder- 1/4 Tbsp

Method

Step 1

At the first step take some green peas and pour this in a bowl along with water . Soak this overnight or for 6 hours .

Then take the other main ingredients like vegetables we using and onion , peel off the skin and clean it well .

Then cut the potato in to small pieces and put this in a pressure cooker along with the green peas and water .

Then put some salt and turmeric powder to it . Then keep it on flame and close the pressure cooker let it cooked well .

Wait for about three to four visils . Meanwhile we can chop the carrot, beans , onion , ginger and green chilly .

When our potato and green peas is cooked off the flame and then drain off excess water and let it cool .

Then heat a pan or kadai and put oil to it . When it is not put the chopped onion , ginger and green chilly to it.

Saute it well until it becomes translucent then add the chopped beans , carrot to it and saute it well .

Close the pan and keep in low flame. It will take five minutes to get cooked , stir it occasionally and when it is done.

Then add the cooked potato and green peas too it , then add coriander powder and chilly powder to it. Pour some salt if needed.

Then mix everything well and off the flame. Keep it closed and let it become cool . Meanwhile take bread crumbs in a plate .

Then take another bowl and put two eggs to it . Then beat it well using a spatula or a beater .

Then take the vegetable mix which is cooked and with clean hands take small small portion from it and make circle or oval shapes.

Make all the vegetable mix in to shapes as you like and then dip each vegetable shapes to the beated egg .

Then take the plate which we kept bread crumbs . After dipping in egg put that to bread crumbs and spread it evenly. Do same with all .

Then take a pan or kadai and put oil to deep fry to it and keep it on flame . Let it hot . Then put the cutlets to it and fry it well .
