Vegetable Kootu Curry Recipe:
Vegetable kootu curry is very rich in proteins and vitamins. In our home, children usually avoid vegetables without even tasting them. But I am sure that after eating this kootu, they will get addict to this recipe easily.
Kootu Curry is a Kerala style recipe which shares common preparation methods. Likewise some similar recipes are Mixed Veg Curry, Onam rice, Nadan Koottu curry, mixed Veg sambar, poricha kootu, araichu vitta sambar, aviyal. This is also the favourite recipe for south Indian bhramins.
This kootu can be prepared by anyone with Moderate cooking skill and usually can be ready in 30 mins (having preparation time of 10 mins, cooking time 20 mins) that can be served to 3-4 persons. Ingredients include brinjal, ladies finger and other veggies.
We can serve it as side dish for meals, chapatti, dosa, anything and everything. When you prepared this kootu you need not to cook anything like sambar, rasam or curries. Also, when my mom went to job at that time i was a little girl and often she prepared this item because it is easy cook and one of the main reason behind this is I never avoid any vegetables.
When you eat the vegetable kootu with hot ghee rice along with papad or vathal it taste is super. It is the one of the richest nutrition food item for vegetarian peoples. Some Nutritional facts on this recipe and key ingredients: Brinjal is known for being rich in fiber, potassium, vitamin B-6 and phytonutrients. It lowers the risk of heart diseases. Ladies finger is also rich in fibre and vitamin A and C.
- Brinjal - 1/2 Kg (or) 3 nos.
- Ladies finger - 1 Cup
- Coconut - 1 Cup
- Chopped onion - 1/2 cup
- Green chilli - 1 Tbsp
- Tomato - 1/4 Cup
- Salt according to taste
- Turmeric powder - 1/4 Tbsp
- Chili powder - 1/2 Tbsp
- Oil - 2 Tbsp
In the first step clean the Brinjal, then brush oil on it. Heat a nonstick pan and pour little oil to it, then keep these brinjal on it. In simmer flame, Roast it well, till the skin of brinjal turn its colour.
When the shape and color of brinjal gets changed, when it’s nicely fried outside. Take out from flame, Keep it to cool. Then peel off the skin and take out the flesh out. Keep it aside.
Meanwhile Fry shallot till it turn into golden brown colour, Add green chili and tomato. stir well.
When all these things gets saute well, add chopped ladies finger to it.
Add turmeric powder and chili powder to half cooked ladies finger.
Mix it well and stir for two minutes.
Then add smashed brinjal and salt. Meanwhile make coconut milk. You can use ready made coconut milk.
Mix everything well. close the pan or kadai for two to three minutes. Then add the coconut milk to it. (we need the first milk from coconut).
Mix everything well and let it get cooked and mixed for two minutes. Keep in low flame and close the kadai.
When our vegetable koottu curry is cooked well, off the flame and stir it well. Serve hot along with rice or chappathi.
